Perfect Stuffed Pairings: Me and my family— we are all lovers of bell peppers. Because of this, we have all perfected the art of making stuffed peppers. Personally, I can eat stuffed peppers all day every day. After all, they are pretty satisfying and filling.
While the peppers are flavorful, there are times when I feel that something is missing. This is most especially true when I have to serve them to my guests. After all, there should be more to your menu than stuffed peppers, right?
This is when my hunt for the perfect stuffed peppers pairings started. I have searched far and wide to know the answer to what goes with stuffed peppers, and finally, I have all the right answers!
What Goes with Stuffed Peppers?
If you were in the same dilemma I was in, you understand how frustrating it is to find the perfect pairing. For the love of stuffed peppers, I worked really hard to come up with different pairings. Some were a success, but there are some that I would prefer not to reminisce.
In this section, I will share with you some of the best pairings I have tried!
If there is one word to describe stuffed peppers, it would be heavy. With all the things that we have stuffed into the peppers, the dish has become one of the most filling dishes in the world. Because of this, you may want something light and healthy to pair with it.
With that in mind, a crunchy veggie salad seems like a perfect fit. For this, you have two options—you can go for coleslaw or a lettuce salad paired with vinaigrette.
Between the two, the coleslaw is more kid-friendly, so if you have kids, you may want to consider this. My favorite coleslaw recipe consists of only 4 ingredients—a shredded coleslaw mix, mayonnaise, honey, and apple cider vinegar. All you have to do is whisk the vinegar, mayonnaise, and honey in a small bowl. In a separate bowl, place the shredded cabbage mix and pour the resulting mixture over it. This one is best served cold so refrigerate it for a few hours before serving.
For the lettuce salad, I love preparing it with lemon vinaigrette. After all, what can be more refreshing than lemon, right? This vinaigrette is best consumed at room temperature or cold, so you should prepare it beforehand. To prepare this, whisk the lemon juice, olive oil, balsamic vinegar, minced garlic, salt, lemon zest, pepper, and Dijon mustard in a small bowl and refrigerate it afterward. For the salad, simply mix red onion, mushrooms, fresh salad greens of your choice, raspberries, and walnuts. Toss everything and drizzle the vinaigrette over it and toss to coat properly.
Stuffed peppers are the complete package—it has fiber, vitamins, proteins, and sometimes, carbs. But if you do not like stuffing your peppers with rice, you would need another carbohydrate source. There is no better option than potatoes. Lucky for you, there are lots of ways on how you can prepare your potato side dishes.
Of course, there are the common ones like mashed potatoes, French fries, and the likes. But if you want to do something a bit more different, I have plenty of recommendations that you can try.
For one, you can try the hash brown casserole. You can prepare this by mixing melted butter, hash browns, cream of chicken soup, chopped onion, sour cream, salt, pepper, and cheddar in a large mixing bowl. After that, transfer the resulting mixture in a casserole dish. Place a saucepan over medium heat. Add the melted butter and saute cornflakes in it. Sprinkle the buttered cornflakes over the potato casserole. Place it in the oven and bake it at 350 degrees for 40 minutes.
Another favorite potato side dish of mine is the German potato pancake. This one is my go-to recipe when I do not have spare time to prepare the side dish. Place eggs, salt, pepper, baking powder, and flour. Beat everything together, then add onions and potatoes. Afterward, place a skillet over medium heat. Place the potato mixture in the skillet, one tablespoonful after the other. Using your spatula, press, and flatten the mixture. Cook one side for 3 minutes and flip to the other side and continue cooking for 3 more minutes. Serve hot and crispy!
Wild Rice Pilaf
If you do not like the idea of stuffing your peppers with rice, another great option that you have is to whip up a rice dish. For me, the best rice dish pairing for stuffed pepper is rice pilaf.
Don’t be intimidated by its name as it is a very easy recipe to prepare. The recipe I will share with you uses an instant pot so it will not take up too much of your time.
To do this, set your Instant Pot to saute setting and add oil into it. Wait for a minute before adding the mushrooms and onions. Cook the vegetables for 4 minutes, stirring it from time to time. After that, add the garlic. After 30 seconds, add in the rice and toast it for 2 to 3 minutes. Once again, stir it from time to time. Turn off the Instant Pot and add water and vegetable broth. Cover the pot, lock it, and set it to high manual pressure. Let it cook for 20 minutes and switch it to NPR. Once all pressure has been released, turn it off and open the pot. Fluff it with a fork and add salt and pepper to taste. Garnish with fresh parsley and serve.
Cheesy Corn Fritters
If you do not like to consume too many carbs, but you want something as simple and bland as fries and potato fritters, then corn fritters are the nest best thing that you can try.
You can prepare this by mixing the corn kernels, green onion, cilantro, jalapeno, and a squeeze of lime juice in a bowl. In a separate bowl, place the flour, salt, pepper, baking powder, and chili powder then stir well. Combine both mixtures. Add the milk, cheese, and eggs to the resulting mixture. Stir to create a thicker batter.
Place a pan over medium-high heat. Drizzle olive oil all over it. Let it heat for a few minutes then transfer a scoop of the batter into the pan and try to use your spatula to create a patty shape by pressing it down. Cook each side for 3 minutes. Sprinkle with salt and pepper to taste. You can serve this with salsa or sour cream.
